Guest-confirmed for vegan-friendly
The hotel's vegan restaurant Phat Chameleon receives mixed reviews: praised by many guests for exceptional fine dining and creative plant-based cuisine, but criticized by others for inconsistent execution, confusing flavors, and recent operational changes (including a split menu schedule and last-minute conversion to fully vegan) that frustrated guests who weren't pre-informed.

The Italian restaurant and the vegan restaurant (we are not vegan), excellent!
Phat Chameleon, the hotel's dedicated vegan/vegetarian restaurant, draws strong praise across TripAdvisor, Google, and Booking for its fine-dining quality, beautiful garden setting, and creative plant-based dishes—many non-vegan guests were surprised by the culinary excellence. However, significant negative feedback emerges around operational issues: the restaurant was converted to fully vegan without adequate guest communication, operates a split vegan/non-vegan schedule by day that created reservation difficulties, and some guests found the food execution underwhelming, with overly oily or peculiar-tasting dishes. The marketing signal present indicates the hotel actively promotes this vegan option.

One restaurant, Phat Chameleon, was a vegan restaurant. I am not vegan but my husband is. I was blown away at the flavours and dishes which were put together in this restaurant. Beautiful food, served with outstanding drinks, in the prettiest setting! We also dined in the Italian restaurant overlooking the sea where they also had options for my vegan hubby and again incredible food
along with an Italian restaurant, Souq Oven, and a vegan restaurant, Phat Chameleon
They have this vegan restaurant plat chameleon it's nice and innovative good to try once.
the Phat Chameleon (vegan/vegetarian restaurant on site) as my husband is vegan, and I'm so glad I did
For those that are vegan and vegetarian, The Chameleon is a special experience for you guys.
Phat Chameleon is an amazing vegan/vegetarian dining experience.
Phat Chameleon - This was probably our "worst" meal. It wasn't bad, just not as great as the other places. First off, I'm not a vegetarian or vegan so I'm probably a little biased... I found both to be pretty underwhelming.
Phat Chameleon is the Vegan option - we're not vegans but found it wonderful. A good choice on the menu and again a lovely setting.
Take a tour of the garden at the vegan restaurant. All of the vegetables they use come from that garden!
The Italian restaurant and the vegan restaurant (we are not vegan), excellent!
The food is sumptuous... Even the Vegan food was surprisingly delicious
The Path Camelon, their vegan restaurant, offers a unique dining experience that's worth trying even if you're not vegan.
Phat Chameleon, the vegan restaurant, was underwhelming. While the menu had creative ideas, the execution fell short. Many dishes were overly oily, and some had peculiar flavors.
The food is amazing and extremely varied, with plenty of vegan and gluten free options. The restaurant staff (especially Hakeem at Melange) are so friendly and helpful.
Phat Chameleon is the vegetarian and vegan restaurant and is set in a beautiful garden setting. It is quiet and peaceful. It has an interesting menu and for someone who doesn't gravitate to vegetarian restaurants per se I was glad my wife encouraged me to go - the food was delicious with beautiful balance in flavours.
Phat Chameleon is a superb restaurant and fine dining at its best. Welcome drinks, cool flannels and 'master chef the professionals' quality food which looks and tastes fantastic. Don't be put off by the vegan menu, embrace the wonderful flavours and enjoy being thoroughly spoiled.

The restaurant Chat Chameleon has a split menu: Sat-Mon is non-Vegan / Tue-Thu is vegan.
As vegetarians, we were blown away by Phat Chameleon, one of the few plant-based restaurants in the Maldives. We dined there nearly every night.
one vegan restaurant. We found out by accident that the vegan restaurant was only vegan part of the week. Whilst the menu looked great, we had no chance of getting a reservation.
Phat Chameleon: We learned on-site it had recently been converted to fully vegan, and staff said this change happened a few weeks prior. It was not marketed as vegan when we booked, and it had been positioned as a Japanese fusion highlight. That was a major disappointment and it removed a big chunk of dining variety.
Phat Chameleon was converted to fully vegan a few weeks before our stay, not communicated, major disappointment because it was marketed as a highlight.
Phat Chameleon is no longer a vegan or veggie restaurant you would be lucky if a third of the dishes on the menu were vegetarian.
Phat Cameleon - a la carte, international fine dining (?) - this was presented to us as the vegetarian/vegan friendly restaurant, wich didn't sound very appealing, as we are meat lovers. We found it to be an exceptionaly good international resturant with a fine dining feel . The food was fantastic and the atmosphere was also very pleasant.
Phat Cameleon, however, was outstanding. Despite being presented as the vegetarian and vegan option, it was a fantastic fine-dining restaurant

PHAT CHAMELEON - A nice garden setting amongst vegetable plants such as aubergine and okra, and large trees. Acceptable vegan type dishes though only tried once
The vegan restaurant Phat Chameleon is not only worth a mention, it's an experience that one can't describe in words. The food is absolutely delicious! Being a hard core non vegetarian I never thought I would ever visit a vegan restaurant but Phat Chameleon really ensures our third visit back to Pullman soon. Must have the banana chips & edamame salad. Literally everything on the menu is delicious.
Also try the Phat Chameleon which is a pretty unique vegan/vegetarian experience.
Phat Chameleon - a vegetarian (vegan available) restaurant with more of a garden/outdoor setting. Great flavours and worth a visit.
I've been to vegan restaurants before (see Yellow, Sydney) and this bordered on confusing, tasteless and inedible.
