It's worth noting that the breakfast buffet offers many options: vegetarian, vegan, gluten-free, etc.
Guests consistently praise the hotel's vegan offerings, highlighting a dedicated vegan section at the buffet, at least 20 nightly vegan dishes prepared by specialty chefs, and personalized accommodation of dietary needs (across Google, Booking, and TripAdvisor). However, mixed feedback emerges on coverage: some diners report ample options, while others note limited choices at specific restaurants (Indigo), inconsistent lunch offerings, and occasional gaps in main courses. One guest reported receiving "pretty much nothing" despite requesting vegan meals, indicating service inconsistency.

Not all the restaurants had vegan options
Our group had a mixture of vegetarian and vegans, and the options available are plenty. For the buffet there was always a vegan section and some restaurants like Indigo at lunchtime had a dedicated vegan menu with high quality options.

As a vegan we were very impressed with the selection of foods available and I cannot thank Veer the Indian speciality chef enough for his culinary talents! Each night he would help explain ingredients used and even prepared personal vegan dishes

Anything, literally ANYTHING you wish for is there - vegan, vegetarian, jain, gluten free, healthy, meaty, fruity, fishy, etc - all the options are there.
The Indigo is good but lacks in options (especially vegan or vegetarian).
If I have to make a suggestion for one minor improvement, which would be to do with selection of Vegetarian food. For the lunch time menus in La kasa, Indigo and the other lunch time restaurants there should be more choice of Vegetarian and Vegan food
I am practically vegan and love curry and I was treated every night to a different dish cooked by a great chef called "Veer".
I am VEGAN and the chef always made sure i had plenty of vegan options at the buffet and even going out of their way to make me a vegan dessert if there wasn't one on that day.
One day a week was a wellness evening where there were a few starter salads which were vegetarian or vegan. Every other evening the starter salads all contained meat or fish. There was never a vegetarian main course the time we were there.

Vegan options low low
I'm actually posting to compliment an extremely efficient employee called Campbell Govindassamy who was so attentive with regards our vegan/dietary requirements. He met us personally with the head chef when we arrived and we had direct contact with him before and during our stay.
The Indian and vegan options were different each evening, but limited, and especially being Indian, we'd prefer to try other cuisines, not just Indian food.
As a vegetarian, there was always enough choice for me. They also had many vegan alternatives.
